If you use a plugin that requires variables you can't input text with diacriticals.

Example:
1. Install Kitchen sink plugin (http://bywatersolutions.com/koha-plugins/)
2. Configure plugin, input a text with diacriticals in "Parameter 'bar'", for example: "catálogo".
3. Save configuration.
4. No open again configure. The text after the diacritial has disappeared. In the example: "cat" instead of "catálogo".

Still valid in master, Kitchen sink plugin version 2. I also found that when running the Kitchen Sink plugin, the patron categories I have which contain diacritics displayed incorrectly. 

Is this problem just with the plugin itself, or with the plugin system in Koha? If the former, I suppose this bug is invalid and should be reported on the plugin's repo.

Just tested with v2.1.32 - it looks all nice and well now. I remember we did some fixes for encoding a longer time ago. Suspecting this is fixed for good.
